This organic red wine from Novaia has a medium ruby red color, is lively and made from the well-known Valpolicella grapes Corvina, Corvinone, RondinellaOn the nose a fragrant aroma with delicate, floral and slightly fruity (fresh black cherry) scents, along with hints of spices (cinnamon, nutmeg, pepper). Soft tannins and good acidity in the mouth. A medium-bodied, juicy, fresh and well-balanced wine. Delicious red wine for the summer period.

What the winery tells us:

Designation of origin: Valpolicella Classico DOC.

Vineyard: Hilly vineyards (250-400 m a.s.l.) in Valpolicella Classica, mainly exposed to south/south-east.

Grapes: Corvina, Corvinone, Rondinella alsno known as the Valpolicella blend.

Grape harvest season and picking method: Last week of September with manual picking of grapes, immediately destined to vinification to preserve the elegant wine aromas.

Training system and plantation density: Guyot with a planting density of 5000 vines/ha Pergola with a planting density of 3300 vines/ha.

Average life of vineyards and yields: 15 years for Guyot 9000 Kg/ha and 40 years for Pergola 10000 Kg/ha.

Vinification: Destemming and soft crushing of grapes with a short period of Pre-fermentative maceration (or cold-macerationFermentation with indigenous yeasts at controlled temperature in stainless steel tanks and in oak truncated-cone vats for 7/8 days. In order to retrieve more color and flavour from the most daily pumpings and delestage are applied to soften the tannins. At the last stage malolactic fermentation (MLF) and Batonage on own yeast are applied in steel until completion.

Ageing: 10 months in steel tanks and 2 months in bottle.

Valpolicella Classico – Marano-vallei

The Classico area is the original and hilly part of Valpolicella. Because the soil mainly consists of volcanic influences, this potentially gives the best wine of Valpolicella. The Novaia vineyards are located in the higher Marano Valley and produce rich wines with nice complexity.

What makes this wine taste so good?

This organic red wine is a Valpolicella Classico DOC and has a light ruby color. The wine is aromatic and light-bodied when it comes to tannin and alcohol content. In addition, the wine is intensely fruity and even a little spicy. Because the wine is soft, fresh and fruity, the wine is an interesting entry-level wine for novice red wine drinkers and combines well with lighter dishes.

Tasting note

Een medium robijn rode kleur en zeer levendig wanneer jong. Dit wordt duidelijk in de neus met delicate hints van bloemen met zwarte kersen en specerijen (kaneel, nootmuskaat en peper). Door het lage alcohol gehalte, de zachte tannines en een wat hogere zuurgraad heeft de wijn een medium body en is daarom uitermate geschikt voor de zomerperiode.

Een zeer geschikte wijn voor de beginnende rode wijn drinker doordat de wijn een sappig en fruitig karakter heeft, maar ook zeer interessant voor de wijnkenner voor speciale gelegenheden.

Wat doe je met de wijn?

Serveren: 16-18°C met andere woorden kamertemperatuur, of heel lichtjes gekoeld en decanteren is niet nodig.
Foodpairing: Appetizers, soepen, pasta en risotto, wit vlees, vis en verse kazen.
Bewaarpotentie: Drink de wijn jong om het meest te kunnen genieten van de subtiele aroma’s en het fruitige karakter.

In one of the most suggestive corners of the High Valpolicella Classica, on the top of a soft hill, a wide fifteenth-century manor house dominates the Marano valley and the plain that separates it from the ancient Roman city of Verona: Novaia.

Novaia means a new court, a new family in the Marano Valley.

In the fifteenth century the Villa was built and the Vaona family moved here from the city in 1700. The Vaona Family quickly bought the surrounding lands and gained a prominent role in the local community.

With the nineteenth century the estate of the Vaona family expanded further, as attested by the notary documents of the time that included the Vaona family among the most important landowner families: the estate produces grapes, wines, oil, cherries, corn and silkworms.
